Ingredients
1 tablespoon butter
1 small yellow onion, very finely diced
2 tablespoons flour
¾ cup beer (Sockeye IPA for deeper flavor or Modelo for smoother profile)
¾ cup whole milk
1 teaspoon Dijon mustard
½ teaspoon garlic powder
1½ cups sharp cheddar, freshly shredded
½ cup Monterey Jack cheese, shredded
Pinch cayenne (optional)
Salt and pepper to taste
Instructions
In a small saucepan, melt butter over medium heat.
Add diced onion and cook slowly 5–7 minutes until soft and lightly golden.
Stir in flour and cook 1 minute to remove raw taste.
Slowly whisk in beer. Let simmer gently 2–3 minutes.
Whisk in milk, Dijon, and garlic powder.
Reduce heat to low. Add cheeses gradually, stirring until fully melted and smooth.
Season with salt, pepper, and a tiny pinch of cayenne if desired.
Keep warm in a small slow cooker or serve immediately.

This creamy white wine chicken with mushrooms and thyme feels refined without being fussy — a comforting, heritage-inspired dish that turns an ordinary February evening into something worth lingering over.
Ingredients
4 boneless, skinless chicken breasts
Salt & black pepper
2 tablespoons butter
1 tablespoon olive oil
8 oz cremini mushrooms, sliced
3 cloves garlic, minced
¾ cup White Wine
1 cup chicken broth
½ cup heavy cream
1 teaspoon fresh thyme (or ½ tsp dried)
1 tablespoon Dijon mustard
Instructions
Season chicken with salt and pepper.
Heat butter and olive oil in a large skillet over medium heat.
Sear chicken 4–5 minutes per side until golden. Remove and set aside.
In the same pan, sauté mushrooms until browned. Add garlic and cook 30 seconds.
Pour in the wine and scrape up browned bits. Let simmer 3–4 minutes to reduce slightly.
Add broth, cream, Dijon, and thyme. Stir well.
Return chicken to the skillet. Simmer 10–12 minutes until cooked through and sauce thickens.
Spoon sauce over chicken and serve.
Serve With
