May is the Month for Brunch
🌿 The Payette River Cedar Trout with Sockeye IPA Honey Glaze
Ingredients:
4 trout fillets or salmon portions
Olive oil
Fresh dill
Fresh parsley
Garlic
Lemon zest
Salt + cracked pepper
Thin lemon slices
Optional: cedar plank for grilling
Lemon Butter:
1 stick butter
Juice of 1 lemon
Tiny drizzle of honey
Pinch smoked paprika
Method:
Rub fish with olive oil, garlic, dill, parsley, lemon zest, salt, and pepper.
Grill on cedar plank or bake at 400°F until just flaky.
Melt butter with lemon juice and honey.
Spoon over fish before serving.
Garnish with grilled lemon halves.
Serve with:
Roasted baby potatoes with rosemary
Charred asparagus
Watermelon, cucumber, and mint salad
🌾 Idaho Riverbank Grain Salad
A little earthy, a little bright.
Ingredients:
Pearl couscous or farro
Sweet corn
Cherry tomatoes
Green onion
Goat cheese
Fresh basil
Toasted sunflower seeds
Dressing:
Olive oil
Apple cider vinegar
Dijon
Honey
Salt + pepper
It tastes like summer gardens and farmers markets and riverside BBQ's!

🍓The Payette Kiss: Huckleberry Pretzel Icebox Bites with Vodka
These are cold, creamy little river-town jewels. Sweet huckleberry, salted pretzel crunch, and a whisper of vodka hidden in the velvet cream cheese filling. They taste like summer evenings in Southwest Idaho after the sun slips behind the cottonwoods.
Makes: 12 bites
Ingredients
Pretzel Crust
2 cups crushed pretzels
6 tbsp melted butter
2 tbsp brown sugar
Pinch sea salt
High Noon Cream Filling
8 oz cream cheese, softened
1 cup whipped topping
1 tsp vanilla extract
1½ tbsp High Noon vodka
3 tbsp powdered sugar
Huckleberry Layer
¾ cup huckleberry preserves or jam
1 tbsp lemon juice
½ cup fresh huckleberries or blueberries
Optional Toppings
White chocolate drizzle
Crushed freeze-dried strawberries
Lemon zest
Tiny mint leaves
Flaky sea salt
Instructions
Make the Pretzel Crust
Mix crushed pretzels, melted butter, brown sugar, and sea salt until evenly coated.
Press about 2 tablespoons into the bottom of:
muffin tin liners, mini mason jars, or small desert glasses
Place in refrigerator while preparing filling
Create the High Noon Cream
In a bowl, beat together: cream cheese, powdered sugar, vanilla, and the 1½ tbsp High Noon vodka.
Fold in whipped topping until smooth and airy.
The vodka gives the filling a soft, mousse-like texture and a subtle chilled finish without overpowering the berries.
Prepare the Huckleberry Layer
Stir together:
huckleberry preserves, lemon juice, and fresh berries.
If desired, warm slightly for easier spooning.
Assemble:
Layer each dessert: pretzel crust vodka cream filling and a spoonful of huckleberry topping
Repeat a small second layer if using taller glasses.
Chill: Refrigerate at least:
3 hours OR overnight.
These become even better the next day.
Top with:
white chocolate drizzle,
crushed strawberries,
tiny pinch flaky salt,
lemon zest.
Serve ice cold.

sliced lemons,
