🍂 Main Street Beverage's Harvest Hearth Pumpkin & Potato Soup

Featuring Keystone Light Beer, Idaho Potatoes, Pumpkin & Savory Smoked Sausage

There is something wonderful about November in Southwest Idaho. The orchards have finished their harvest, the last golden leaves are drifting across the streets of Emmett, and the chilly evenings invite us back into the kitchen for something warm, hearty, and delicious.

This original Main Street Beverage recipe brings together three comforting ingredients: sweet autumn pumpkin, creamy Idaho potatoes, and smoky sausage, all simmered in a savory broth enriched with Keystone Light beer, featured in MSB's November 4–17 advertisement.

And because a delicious autumn supper shouldn't require an expensive cut of meat, we're using smoked pork sausage, which is often available for considerably less than $7 per pound.

Harvest Soup

🍲 Harvest Hearth Pumpkin, Potato & Smoked Sausage Soup

With Keystone Light Beer, Garlic, Sage & Cream

Ingredients

  • 12–14 oz smoked pork sausage, sliced into ¼-inch rounds

  • 1 tablespoon butter

  • 1 medium yellow onion, diced

  • 2 medium carrots, diced

  • 3 cloves garlic, minced

  • 1½ pounds Idaho Russet or Yukon Gold potatoes, peeled and cut into ¾-inch cubes

  • 1½ cups pumpkin purée (100% pumpkin, not pumpkin pie filling)

  • 1 cup Keystone Light beer

  • 3 cups chicken broth, preferably low sodium

  • 1 teaspoon dried rubbed sage

  • ½ teaspoon dried thyme

  • ½ teaspoon smoked paprika

  • ¼ teaspoon ground black pepper

  • ½ teaspoon salt, or to taste

  • ½ cup heavy cream or half-and-half

  • 1 teaspoon apple cider vinegar

  • 2 tablespoons fresh parsley, chopped

Optional toppings: Toasted pumpkin seeds, shredded sharp cheddar, cracked black pepper, or warm crusty bread for dipping.

Directions

1. Brown the smoked sausage.

Heat a large Dutch oven or heavy-bottomed soup pot over medium heat. Add the sliced sausage and cook for 4–5 minutes, turning occasionally until lightly browned. Remove the sausage to a plate, leaving approximately 1 tablespoon of drippings in the pot.

2. Build the autumn flavors.

Add butter, onion, and carrots to the pot. Cook for 5 minutes until the vegetables begin to soften. Stir in the garlic, sage, thyme, smoked paprika, and black pepper. Cook for another 30 seconds until fragrant.

3. Pour in the Keystone Light.

Slowly add 1 cup of Keystone Light, scraping the bottom of the pot to release the browned bits from the sausage. Let the beer simmer uncovered for 3–4 minutes. Its gentle malt flavor adds depth without overpowering the pumpkin.

4. Add the pumpkin and potatoes.

Stir in the pumpkin purée until combined with the beer and vegetables. Add the diced Idaho potatoes, chicken broth, and salt. Bring to a gentle boil, then reduce heat, cover partially, and simmer for 15–20 minutes until the potatoes are fork-tender.

5. Create a creamy, rustic texture.

Using a potato masher, gently mash some of the potatoes directly in the pot, leaving plenty of tender chunks. This naturally thickens the soup while keeping its hearty farmhouse character.

6. Finish with sausage and cream.

Return the browned sausage to the pot. Stir in the cream and apple cider vinegar. Simmer gently for 3–5 minutes until the sausage is heated through. Avoid boiling once the cream is added. Taste and adjust the seasoning.

7. Serve and enjoy.

Ladle into deep bowls and finish with fresh parsley, toasted pumpkin seeds, or a little sharp cheddar. Serve with warm sourdough bread and a crisp autumn evening.

Orchard Apple and Cheddar Skillet Bread

🌙🍎 Main Street Beverage's Orchard Hearth Apple & Cheddar Skillet Bread

With Sharp Cheddar, Fresh Apples, Browned Butter & Garden Thyme

There is something especially inviting about the scent of bread baking on a chilly November afternoon. Add the sweetness of freshly harvested Idaho apples, the richness of sharp cheddar, and a little garden thyme, and suddenly the kitchen becomes everyone's favorite gathering place.

Created especially for Main Street Beverage, this rustic skillet bread is the perfect companion to our Harvest Hearth Pumpkin, Potato & Smoked Sausage Soup.

The bread has a golden, buttery crust, a tender interior dotted with little pockets of apple, and melted cheddar throughout. It's savory rather than sweet, with just enough apple to bring out the richness of the cheese.

And best of all? No yeast, no kneading, and no waiting for dough to rise!

Time: 45–50 minutes

Servings: 8 wedges

Size: 10-inch skillet, or Cast Iron if you have it!!

🧀 Orchard Hearth Apple & Cheddar Skillet Bread

Ingredients

Dry ingredients

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon baking soda

  • ¾ teaspoon salt

  • ½ teaspoon freshly ground black pepper

  • 1 teaspoon fresh thyme leaves, finely chopped (or ⅓ teaspoon dried thyme)

Wet ingredients

  • 2 large eggs

  • ¾ cup buttermilk

  • ¼ cup sour cream

  • 3 tablespoons unsalted butter, melted and cooled slightly

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

Apple & cheddar filling

  • 1 medium crisp Idaho apple, such as Honeycrisp or Granny Smith, peeled and diced into ¼-inch pieces (about ¾ cup)

  • 1¼ cups freshly shredded sharp cheddar cheese, divided

  • 2 tablespoons finely chopped green onions

  • 1 teaspoon fresh lemon juice

For the skillet

  • 1 tablespoon unsalted butter

  • 1 teaspoon fresh thyme leaves

  • Flaky sea salt, optional

Directions

1. Prepare the oven and skillet. Preheat the oven to 400°F. Place a 10-inch cast-iron skillet in the oven for 5 minutes while preparing the ingredients.

2. Prepare the apples. Toss the diced apples with lemon juice and pat dry with a paper towel. This helps prevent excess moisture from making the bread soggy.

3. Combine the dry ingredients. In a large bowl, whisk together flour, baking powder, baking soda, salt, black pepper, and thyme.

4. Mix the wet ingredients. In a separate bowl, whisk together eggs, buttermilk, sour cream, melted butter, Dijon mustard, and honey until smooth.

5. Add the apples and cheddar. Stir the apples, green onions, and 1 cup of shredded cheddar into the dry ingredients, coating everything lightly with flour.

6. Make the batter. Pour the wet ingredients into the dry mixture. Gently fold together until no dry flour remains. The batter should be thick and spoonable. Avoid overmixing.

7. Butter the skillet. Carefully remove the hot skillet from the oven. Add 1 tablespoon of butter, swirling to coat the bottom and sides. The butter should sizzle and begin turning lightly golden.

8. Bake until golden. Spoon the batter into the skillet and spread evenly. Sprinkle the remaining ¼ cup cheddar and fresh thyme over the top. Bake for 25–32 minutes, until golden brown and a toothpick inserted into a bread-only section comes out clean. The center should reach approximately 200°F.

9. Rest and serve. Allow the bread to rest in the skillet for 10 minutes before slicing into wedges. Sprinkle with flaky sea salt if desired.

🍯 Optional: Warm Honey-Thyme Butter

For an extra-special finishing touch, stir together:

  • 3 tablespoons softened salted butter

  • 1 teaspoon honey

  • ½ teaspoon finely chopped fresh thyme

  • A pinch of black pepper

Serve alongside warm wedges of skillet bread. The honey complements the apples without making the bread overly sweet.

Apple and Pear Warmer

🍎 Main Street Beverage's Golden Orchard Apple & Pear Warmer

With Fresh Orange, Vanilla & a Whisper of Cinnamon

November evenings in Southwest Idaho have a way of bringing everyone indoors. The sun disappears behind the foothills, the air turns crisp, and the kitchen fills with the wonderful aromas of supper cooking.

To accompany our Harvest Hearth Pumpkin, Potato & Smoked Sausage Soup and Orchard Hearth Apple & Cheddar Skillet Bread, we're adding something warm and comforting to the table.

This original Golden Orchard Apple & Pear Warmer brings together sweet apple cider, mellow pear nectar, fresh orange, and just enough vanilla and cinnamon to make the house smell delicious.

Unlike traditional mulled cider, which can be heavily spiced and quite sweet, this version is deliberately light, gently fruity, and refreshing enough to enjoy with a savory dinner.

Best of all, it's completely alcohol-free, so everyone around the table, from the youngest guests to the grandparents, can enjoy a steaming mug together. 🍐

Time: 25 minutes

People: 6–8 servings

Alcohol-free

🍐 Golden Orchard Apple & Pear Warmer

Ingredients

  • 4 cups unfiltered apple cider (nonalcoholic)

  • 2 cups pear nectar, preferably unsweetened

  • 1 cup water

  • 1 medium orange, thinly sliced, seeds removed

  • 2 cinnamon sticks

  • 1 tablespoon fresh lemon juice

  • ½ teaspoon pure vanilla extract

  • 1–2 teaspoons maple syrup, optional, depending on the sweetness of the fruit juices

  • 1 small sprig fresh rosemary, optional

For serving

  • Thin apple or pear slices

  • Small cinnamon sticks

  • Fresh orange slices

  • A few tiny rosemary sprigs, optional

Directions

1. Combine the orchard fruits. In a medium saucepan, combine the apple cider, pear nectar, and water. Stir gently and place over medium heat.

2. Add the autumn aromatics. Add the orange slices and cinnamon sticks. Heat until the liquid begins to steam and small bubbles appear around the edges. Do not bring to a rolling boil.

3. Gently infuse. Reduce the heat to low and let the mixture steep for 15–20 minutes. This allows the orange and cinnamon to release their flavors without overwhelming the delicate pear.

4. Finish with vanilla. Remove the saucepan from the heat. Stir in the lemon juice and vanilla extract. Taste and add maple syrup only if needed.

5. Add a garden touch. If using rosemary, add the sprig during the final 2 minutes of steeping, then remove it. The goal is a very subtle herbal note that complements the thyme in the skillet bread.

6. Serve warm. Remove the cinnamon sticks and cooked orange slices. Ladle into heat-safe mugs and garnish with a fresh apple slice, a thin orange wheel, or a small cinnamon stick.

For younger children, allow the drink to cool to a comfortable temperature before serving.
