Idaho Christmas Hard Cider-Braised Pork Loin
A delicious stew to welcome family to the table.
Ingredients (serves 6–8)
1 whole pork loin or pork shoulder (3–4 lbs)
2 tbsp butter or lard
1 large yellow onion, sliced
4 cloves garlic, smashed
2 cups Hard Cider ( I use Angry Orchard, but you can use your favorite brand.)
1 cup chicken or pork stock
2 Idaho apples (Honeycrisp or Granny Smith), sliced thick
2 tbsp apple cider vinegar
2 tbsp honey or brown sugar
1 tbsp whole-grain mustard
2 sprigs fresh rosemary
2 sprigs thyme
Salt & cracked black pepper
Method
Season the pork heavily with salt and pepper. Let it sit at room temp 30 minutes—cold meat cooks poorly.
In a heavy Dutch oven, sear pork hard in butter/lard until deeply browned on all sides. Remove.
Add onions to the same pot. Cook until golden and soft. Add garlic briefly.
Deglaze with Hard Cider of your choice, scraping the bottom
Add stock, vinegar, honey, mustard, herbs, apples.
Return pork to the pot. Liquid should come halfway up the meat.
Cover and braise at 300°F for 2.5–3 hours, until fork-tender.
Remove pork, tent with foil.
Reduce the sauce uncovered on the stove until glossy and rich. Adjust salt.
Serve With
Mashed potatoes or roasted root vegetables
Braised cabbage or green beans
Sourdough or biscuits for sauce-soaking

Backyard Fireworks Mulled Wine (Emmett Style)
A simple mulled wine recipe to welcome in the New Year
What You’ll Need
1 box (or half box) Red Wine( I prefer Bota Box Merlot, but any box wine and flavor you like will work as well.)
1 orange, sliced into rounds
1 apple, sliced (any Idaho apple)
2–3 cinnamon sticks
5 whole cloves
2 star anise (optional, but nice)
¼ cup honey or brown sugar (adjust to taste)
Optional local upgrade:
A splash of brandy, bourbon, or spiced rum ( I enjoy a splash of bourbon but spiced rum or brandy works as well.)
A knob of fresh ginger, sliced
How to Make It
Pour the wine into a large pot.
Add fruit, spices, and sweetener.
Heat low and slow — do not boil.Steam is good. Bubbles are bad.
Let it warm for 20–30 minutes, stirring occasionally.
Taste. Adjust sweetness if needed.
Turn to low keep-warm and leave it there all night.
That’s it.
How to Serve
Ladle into simple mugs or mason jars
Garnish with:
Orange slice
Cinnamon stick
Keep the pot on the stove or a hot plate
People can come in, warm up, go back out to ohh and ahhh at the fireworks
