Drink: Barefoot Cabernet Cozy Pour

Idaho Hearty Beef Stew
Rich broth. Fork-tender beef. Potatoes that soak up every drop. This is the kind of meal that makes the house smell like comfort.
Ingredients:
2 lbs beef chuck, cut into chunks
3 tbsp flour
2 tbsp olive oil
1 large onion, chopped
3 carrots, sliced
3 celery stalks, sliced
3 cloves garlic, minced
4 cups beef broth
1 cup red wine (optional, enhances depth)
3 potatoes, cubed
2 tbsp tomato paste
1 tsp dried thyme
1 bay leaf
Salt & pepper
Instructions:
Toss beef with flour, salt, and pepper.
Brown in olive oil in a heavy pot. Remove and set aside.
Sauté onion, carrots, and celery until softened. Add garlic.
Stir in tomato paste.
Return beef to pot. Add broth, wine, thyme, and bay leaf.
Simmer covered on low 1.5–2 hours.
Add potatoes and cook 30 more minutes until tender.
Adjust seasoning and serve hot.
