Late summer has arrived in Southwest Idaho, bringing those gorgeous golden days when the afternoons are still warm, the evenings linger, and Fair season adds a little extra excitement to the final weeks of August.

These are the weekends for gathering family and friends and making the most of an Idaho summer while it is still here. Pack the cooler for one more trip to the lake, spend an afternoon along the river, escape into the forests for a weekend adventure, or head to the Fair for rides, exhibits, music, and all those wonderfully indulgent foods we wait all year to enjoy. 🎠🌲🌊


There is something especially beautiful about late summer in Idaho. Brilliant sunsets wash the evening sky in gold, peach, pink, and fiery orange, inviting everyone to linger outside just a little longer. Hanging lights begin to glow over backyard tables, smoke drifts from the grill, and the smell of something delicious cooking becomes its own invitation to pull up a chair.


Summer is not finished quite yet. These last warm days are made for cold drinks, Fair-inspired treats, backyard dinners, lake days, river afternoons, and evenings spent sharing good food and stories with the people we love.

This round of Fresh New Deals brings a little Fair food fun for grown-ups to the last golden days of summer. Fry up a batch of Coors Beer-Battered Sweet Corn Fritters, crisp and golden with fresh August corn, sharp cheddar, and a drizzle of hot honey-lime ranch. Then indulge in Barefoot Berry Funnel Cake Sundaes, with warm powdered-sugar funnel cakes, vanilla ice cream, and late-summer berries soaked in a splash of sweet Barefoot Moscato. 🌽🍺🎡🍓

Two Fair-inspired favorites made for adults to enjoy as warm Idaho evenings invite us outside for fun food, lingering beneath the patio lights, and great conversation with friends.

Coors battered Sweet Corn Fritters w/ Honey Lime Ranch


🎡 Coors Beer-Battered Sweet Corn Fritters

with Hot Honey–Lime Ranch


These little golden fritters bring together fresh August corn, sharp cheddar, green onion, and a light Coors beer batter. They are fried until crisp around the ragged edges, then served with a cool ranch dip drizzled with hot honey. Think Idaho backyard meets State Fair food booth, without requiring a deep-fried stick of butter. 😄

Makes: about 18 small fritters

Serves: 6 as an appetizer


For the Corn Fritters

  • 2 cups fresh sweet corn kernels, about 3 ears

  • ¾ cup all-purpose flour

  • ¼ cup fine yellow cornmeal

  • 1 tsp baking powder

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 large eggs

  • ½ cup Coors Banquet or Coors Light

  • ¾ cup shredded sharp cheddar

  • 3 green onions, thinly sliced

  • 1 small jalapeño, finely diced, optional

  • 2 tbsp chopped fresh cilantro

  • Neutral oil for frying


For the Hot Honey–Lime Ranch

  • ½ cup ranch dressing

  • 1 tbsp fresh lime juice

  • ½ tsp lime zest

  • 1 to 2 tbsp hot honey

  • Pinch of smoked paprika


To finish

  • Crumbled cotija or feta

  • Chopped cilantro or green onion

  • Lime wedges

  • Extra hot honey


Mix the flour, cornmeal, baking powder, garlic, paprika, salt, and pepper. In another bowl, whisk the eggs with the cold beer. Pour the wet mixture into the dry ingredients and stir just until combined.

Fold in the fresh corn, cheddar, green onion, jalapeño, and cilantro. The batter should be chunky and thick enough to hold together on a spoon. If it feels too stiff, add another splash of Coors.

Heat about ½ inch of oil in a heavy skillet over medium-high heat. Drop heaping tablespoons of batter into the hot oil and gently flatten them. Fry for about 2 to 3 minutes per side, until deeply golden and crisp. Transfer to a rack or paper towels and season immediately with a little salt.

For the sauce, stir the ranch, lime juice, and zest together. Spoon it into a small serving bowl and swirl hot honey across the top with a dusting of smoked paprika.

Pile the warm fritters onto a platter, scatter over a little cotija, cilantro, and green onion, then give the whole thing a light drizzle of hot honey. Serve with lime wedges and plenty of the ranch for dipping.

🎠 Barefoot Berry Funnel Cake Sundaes

with Moscato-Macerated Late-Summer Berries


Crispy, warm funnel cake dusted with powdered sugar, piled with vanilla ice cream and juicy late-summer berries soaked in a splash of sweet Barefoot Moscato. It has all the glorious excess of fair food, but the berries make it feel fresh enough for the final golden weeks of August. 🍓🫐🍑


Serves 6

For the Moscato Berries:

  • 1 cup sliced strawberries

  • 1 cup fresh blackberries or blueberries

  • 1 ripe peach, diced

  • ⅓ cup Barefoot Moscato or Pink Moscato

  • 1 tbsp sugar

  • 1 tsp fresh lemon juice

  • ½ tsp vanilla

For the Funnel Cakes:

  • 2 cups all-purpose flour

  • 2 tbsp sugar

  • 1½ tsp baking powder

  • ½ tsp salt

  • 2 large eggs

  • 1¼ cups whole milk

  • 1 tsp vanilla

  • Neutral oil, for frying

  • Powdered sugar, generously!

For serving:

  • Vanilla bean ice cream

  • Moscato berries

  • Whipped cream

  • Crushed waffle cone pieces, optional

  • Fresh berries and peach slices


Start with the fruit. Combine the strawberries, blackberries or blueberries, peach, Moscato, sugar, lemon, and vanilla. Let everything mingle in the refrigerator for about 30 minutes. The fruit will soften slightly and create its own gorgeous pink-gold syrup.


For the funnel cakes, whisk together the flour, sugar, baking powder, and salt. In another bowl, whisk the eggs, milk, and vanilla. Add the wet ingredients to the dry and whisk until you have a smooth, pourable batter.

Heat about 1½ inches of oil in a heavy skillet or Dutch oven to 375°F.

Transfer some batter to a squeeze bottle, piping bag, or measuring cup with a narrow spout. Carefully drizzle the batter into the hot oil in overlapping circles and squiggles, creating that wonderfully chaotic State Fair funnel-cake shape.

Fry for about 1 to 2 minutes per side, until puffed and golden brown. Drain and immediately shower with powdered sugar.


Now comes the fun part. 🎡

Place a warm funnel cake on each plate or shallow bowl. Add a scoop of vanilla bean ice cream right in the center, then spoon the cold Moscato-soaked berries and some of their syrup over everything. Finish with whipped cream, fresh fruit, another snowfall of powdered sugar, and crushed waffle cone if you want extra crunch.


The magic is in the temperature contrast: hot crispy cake + melting vanilla ice cream + cold wine-soaked summer fruit.
