Pineapple Korean BB

Pineapple Korean Chicken

Pineapple Korean BBQ Chicken 🍍🔥

Sweet, savory, and lightly spicy grilled chicken glazed with pineapple vodka seltzer, gochujang, soy sauce, ginger, and garlic. It is an easy late-summer recipe for backyard dinners, warm evenings, and gathering around the grill.

Serves 4–6

Ingredients

  • 2½–3 pounds boneless, skinless chicken thighs

  • 1 can High Noon Pineapple Vodka Seltzer, divided

  • ⅓ cup soy sauce

  • 3 tablespoons gochujang

  • 3 tablespoons brown sugar

  • 2 tablespoons rice vinegar

  • 1 tablespoon toasted sesame oil

  • 1 tablespoon freshly grated ginger

  • 4 garlic cloves, minced

  • 1 teaspoon lime zest

  • 1 tablespoon fresh lime juice

  • ½ teaspoon black pepper

  • 1 teaspoon cornstarch

  • 1 tablespoon cold water

  • Neutral oil for the grill

For Serving

  • Sliced green onions

  • Toasted sesame seeds

  • Grilled pineapple rings

  • Steamed jasmine rice

  • Cucumber salad or Asian-style slaw

  • Lime wedges

Make the Marinade

In a bowl, whisk together ¾ cup High Noon Pineapple, soy sauce, gochujang, brown sugar, rice vinegar, sesame oil, ginger, garlic, lime zest, lime juice, and black pepper.

Reserve about ¾ cup of the mixture for the glaze. Place the chicken in a covered container or resealable bag and pour the remaining marinade over it. Refrigerate for at least 2 hours or up to overnight.

Prepare the Glaze

Pour the reserved marinade into a small saucepan and bring it to a gentle simmer. Mix the cornstarch with one tablespoon of cold water, then stir it into the sauce. Simmer for 3–5 minutes, stirring frequently, until the glaze becomes glossy and thick enough to coat a spoon.

Grill the Chicken

Preheat the grill to medium-high heat and lightly oil the grates. Remove the chicken from the marinade and discard the used marinade.

Grill the chicken for approximately 5–7 minutes per side, or until it reaches an internal temperature of 165°F. During the final few minutes, brush each piece generously with the pineapple-gochujang glaze, turning once or twice to create caramelized edges.

Grill the pineapple rings alongside the chicken until warm and lightly charred.

Serve

Arrange the chicken over jasmine rice and spoon over a little extra glaze. Finish with green onions, toasted sesame seeds, grilled pineapple, and fresh lime.

Ginger-Pear Wine Spritz

Ginger-Pear White Wine Spritz 🍐✨

A bright, lightly sparkling cocktail with crisp white wine, juicy pear, fresh ginger, and lime. Its gentle sweetness and cooling citrus balance the spicy gochujang glaze on the Korean BBQ Chicken without overpowering the smoky pineapple flavors.

Makes 4 cocktails

Ingredients

  • 2 cups Franzia Crisp White wine, chilled

  • 1 cup pear nectar, chilled

  • ½ cup ginger beer

  • ¼ cup fresh lime juice

  • 2 tablespoons honey-ginger syrup

  • ½ Asian pear, thinly sliced

  • Ice

  • Lime wheels and fresh mint for garnish

Honey-Ginger Syrup

  • ¼ cup honey

  • ¼ cup water

  • 1-inch piece fresh ginger, thinly sliced

Make the Syrup

Combine the honey, water, and ginger in a small saucepan. Warm gently for 3–4 minutes, stirring until the honey dissolves. Remove from the heat, steep for 10 minutes, then strain and chill.

Mix the Cocktail

Fill a pitcher with ice and add the chilled white wine, pear nectar, lime juice, and honey-ginger syrup. Stir gently, then add the ginger beer just before serving.

Pour into ice-filled glasses and garnish with thin slices of Asian pear, lime wheels, and fresh mint.

For a little Korean-inspired flourish, add a very thin ribbon of cucumber or sprinkle a few toasted sesame seeds over the pear garnish.
