🥃 The Emmett Valley Cider Smash
A cozy, golden sip inspired by Idaho’s orchards, family tables, and fireside toasts.
Story:
When the apples are pressed and the fields go quiet, Emmett gathers around the table to give thanks — and this drink captures that spirit in a glass. The Emmett Valley Cider Smash brings together crisp local cider, whiskey warmth, and a hint of rosemary smoke for a cocktail that feels like home. Perfect for sharing with family or sipping as the sun sets over the valley hills.
Ingredients (makes 2 drinks):
4 oz. Local Apple Cider (chilled or warmed)
3 oz. Firestone 805 or your favorite light ale
2 oz. Pendleton Whiskey
½ oz. Maple Syrup
½ oz. Fresh Lemon Juice
A few dashes Angostura Bitters
Fresh rosemary sprig and apple slice (for garnish)
Directions:
In a shaker with ice, combine whiskey, cider, maple syrup, lemon juice, and bitters. Shake well.
Strain into a rocks glass filled with fresh ice.
Top with Firestone 805 for a light, golden fizz.
Garnish with a rosemary sprig — lightly singe the end with a match to release its aroma — and a thin apple slice.
Optional Warm Version:
Skip the shaker. Gently warm cider, maple syrup, and lemon juice on the stove, then pour into a mug with whiskey. Stir, top with a splash of Firestone 805, and garnish as above.
Tasting Notes:
Golden, crisp, and balanced — like Thanksgiving in a glass. The cider and beer mingle to echo orchard sweetness and grain warmth, while the rosemary smoke adds an earthy, fireside touch.

🧀 Rosemary Apple & Smoked Gouda Crostini
An Idaho-inspired bite — crisp, creamy, and kissed with orchard sweetness.
Story:
This small bite captures the essence of an Emmett Thanksgiving: apples from the valley, warm bread fresh from the oven, and smoky cheese that mirrors the comfort of a firepit evening. Serve it as guests arrive with a glass of the Emmett Valley Cider Smash — it’s the perfect start to a cozy night in good company.
Ingredients (makes about 12 crostini):
1 Baguette, sliced into ½-inch rounds
2 Tbsp Olive Oil
1 Crisp Idaho Apple (Honeycrisp or Fuji), thinly sliced
6 oz Smoked Gouda, sliced thin
1 Tbsp Maple Syrup
½ tsp Fresh Rosemary, finely chopped (plus extra for garnish)
Pinch of Sea Salt
Optional: Crispy Prosciutto or Toasted Walnuts for topping
Directions:
Preheat oven to 375°F. Arrange baguette slices on a baking sheet and brush lightly with olive oil.
Toast for 5–7 minutes until golden.
Layer each slice with a piece of smoked gouda and a thin apple slice.
Return to the oven for 3–4 minutes, until cheese is just melted.
Drizzle lightly with maple syrup and sprinkle with rosemary and sea salt.
Garnish with crispy prosciutto or toasted walnuts if desired. Serve warm.
Tasting Notes:
The smoked gouda melts into the apple’s brightness, the maple ties back to the cocktail’s sweetness, and rosemary bridges both with that unmistakable Idaho aroma of pine and hearth.
